Rooted in the philosophy of ‘Mountain to Plate’, the festival pays tribute to the resilience, ingenuity, and sustainable culinary practices of Himalayan communities. The showcase highlights age-old techniques such as foraging, fermentation, and preservation, while bringing indigenous ingredients like Jakhiya, Timur, Shamu, Mandua, Dalle chilli, and Ema to the forefront — each adding distinctive flavours, textures, and depth to the dining experience.
Curated meticulously by the hotel’s culinary team, The Himalayan Trail brings together traditional recipes and authentic regional ingredients, offering guests a rare opportunity to explore the vibrant flavours of the Himalayan belt.
